    Sometimes you just need chocolate. But sometimes you don't have time to be in the kitchen, making dozens of cookies or a cake, rolling and chilling pastry, and on and on.

    And sometimes you have guests that don't eat gluten or dairy, either because of medical issues or personal choice.

    It is my opinion that EVERYONE deserves a treat every once in a while! So with guests coming to my house soon that need gluten-free and dairy-free treats, I decided to come up with a few and test them out.

    A little experimentation

    There are lots of recipes for flourless cake and cookies but this is the first time that I have tried one. I wasn't really sure what to expect but, I have to say that I was pleasantly surprised! I will make a few additional tweaks but for now, I am so happy with this first attempt!

    So was my family....the proof is in the pudding, so to speak! Within 24 hours of making these, they were gone.

    Every.

    Single.

    One!

    Quickest. Cookies. Ever!

    Honestly, these cookies couldn't be simpler. You don't need to use a stand mixer or a lot of other tools. One bowl, one spatula, a sifter and a cookie sheet like this one. Job done. These flourless chocolate cookies come together in less than 5 minutes and then go into the oven for somewhere between 12 and 15 minutes, depending on your oven.

    Keep 'em soft!

    Keep an eye on them towards the end of the baking time. You want to pull them when they are just set in the middle. They will crackle beautifully all over the top!

    Let them cool on the baking sheet for a couple of minutes, just to make sure that they are set. Then move them to a cooling rack and allow to cool completely.

    Perfect fudgy, chocolatey flourless cookies!

    The center of these cookies is soft and fudgy and soooo satisfying! The edges are a little crisp, giving a perfect contrast to the soft center. A little salt sprinkled on top as soon as they come out of the oven is the perfect finishing touch.

    You could leave the salt off but....why would you?? Salt and chocolate are the PERFECT pairing!

    Flourless Chocolate Cookies

    Ingredients

    • 90 grams (⅔ cup) unsweetened cocoa powder

    • 380 grams (2 ½ cups) powdered sugar

    • 3 ¼ teaspoons cornstarch

    • ¾ teaspoon salt

    • 4 large egg whites, lightly beaten

    • ¾ cup dairy free mini chocolate chips

    • 1 Tablespoons flake sea salt

    Directions

    • Preheat oven to 350 degrees. In a medium bowl, sift together the cocoa powder, powdered sugar, cornstarch and salt.
    • In a small bowl, lightly beat the egg whites. Stir the egg whites into the dry mixture until all of the dry ingredients are mixed in.
    • Stir in the mini chocolate chips.
    • Drop a tablespoon at a time on a parchment lined cookie sheet. Place two inches about.
    • Bake for 12 to 15 minutes or until just set in the center and crackled all over. Sprinkle with sea salt while still hot.
    • Allow to cool on baking sheet for 2 to 3 minutes. Remove to a cooling rack and allow to cool completely.

      Never made flourless cookies, but I am super fond of flourless choc cake, so there you go

      I might make them this week to take to our senior center in town - I bet they will love them!
