Plum and Ginger Shortcakes for the WIN!

Most people have had Strawberry Shortcakes but why not be original top your biscuit-like shortcakes with a delicious mixture of plums, fresh ginger and other spices!

Plums and ginger are a match made in heaven! The sweet plums are perfectly complemented by the warm ginger and then accented by cinnamon and a pop of fresh lemon zest and juice.

Shortcakes are very similar to American biscuits. Without the sugar topping, these biscuit-like shortcakes would be perfect to top with sausage and white gravy! However you top them, they are delicious!

Amazing Make-Ahead Plum Recipe

One of the great things about this plum recipe is that the elements can be made in advance and assembled just before serving. This will keep the shortcakes crisp until they are toppe d with fruit and whipped cream.

The spiced plums cook in about 5 to 8 minutes on the stove and then can be cooled and refrigerated until you are ready to serve them. As the plums cook, they will release their juices, which will thicken up a bit to make a spiced plum syrup.

Make the plums and the shortcakes in the morning and then just assemble after dinner for an easy and amazing dessert!

How to Makethis Plum Recipe | Plum and Ginger Shortcakes

This plum recipe couldn’t be easier to whip up!

First, make the shortcakes:

  1. Mix together all of the dry ingredients in a medium to large bowl. Add the small chunks of butter and, using your fingertips, rub the butter into the flour mixture. Continue doing this until the butter pieces are about the size of peas and are covered in flour. Pour in the buttermilk and mix together gently to incorporate. Do not overmix – working the batter will give you dense and tough shortcakes!
  2. Scoop the batter on to a lined baking sheet with a large spoon or a large cookie scoop.
  3. Sprinkle with coarse sugar. You can use demerrara sugar or sparkling sugar. In a pinch, just use regular granulated sugar.
  4. Bake at 425F for 13 to 15 minutes, until beginning to brown.

Next, make the spiced plums:

  1. Slice and pit your plums. Grate the fresh ginger and mix into the plums.
  2. Add the plums and ginger to a pan and add the sugar, cinnamon, lemon zest and juice.
  3. Cook over medium-low heat for 5 to 8 minutes, stirring occassionally.
  4. Once the juices have been released and thickened up, remove from heat and add the softened butter. Stir it until the butter is melted and incorporated.
  5. Cool or serve while still warm.

Assemble your Plum and Ginger Shortcakes:

  1. Cut the top off the shortcakes with a serrated knife.
  2. Spoon spiced plums onto the bottom piece of shortcake. Drizzle on syrup to your hearts content!
  3. Top with a dollop of whipped cream.
  4. Replace the top of the shortcake and top with more plums, syrup and whipped cream. Enjoy!

Ingredients
 
 

For the Shortcakes

  • 250 grams 2 cups all-purpose flour
  • 3 tablespoons granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon salt
  • 142 grams 10 tablespoons butter, cold and cubed
  • 177 mL 3/4 cup buttermilk***
  • 2 tablespoons coarse sugar for sprinkling

For the Spiced Plums

  • 1 pound plums about 6 plums
  • 67 grams 1/3 cup granulated sugar
  • 1 tablespoon grated fresh ginger
  • Zest of one lemon
  • Juice of 1/2 lemon
  • 3/4 teaspoon ground cinnamon
  • 3 tablespoons butter softened
  • 2 cups Cool Whip or Homemade Whipped Cream

Instructions

    Why have you crossed the ginger in your ingredients list?
