Ingredients
 
 

  • 495 mL warm milk
  • 15 grams granulated sugar
  • 9 grams instant yeast
  • 660 grams bread flour
  • 45 grams granulated sugar
  • 6 grams salt
  • 3 tablespoon milk powder
  • 45 grams unsalted butter, at room temperature
  • 1 egg beaten, for egg wash
  • 2 tablespoon Everything Bagel Seasoning

Instructions
 

  • In the bowl of a stand mixer, mix together the warm milk, 3 teaspoon sugar, and the yeast. Stir and set aside for about 5 minutes.
  • In a medium bowl, mix together the flour, 45 grams of sugar, salt, and milk powder. Sift to blend and then add about ½ cup at a time to the stand mixer while the mixer is running. Mix until wet and dry ingredients are combined and then cover and let rest for 20 minutes.
  • Using the dough hook, turn on the mixer and add the butter in small amounts until it is incorporated. Mix for 6 to 8 minutes, until the dough begins to pull away from the side of the bowl.
  • Shape the dough into a ball and place in a greased bowl for 45 minutes, or until almost doubled in size.
  • Punch down the dough and divide it into 18 equal pieces. (If you have a scale, you can weigh each piece. If you don't, cut the dough in half, then cut each of those into three even pieces. Cut each of those into three even pieces.
  • Line a 9x13 baking pan with parchment paper. Place the rolls in the pan and cover with a damp dishcloth. Set aside in a warm place to rise for 45 minutes. Preheat the oven to 350F.
  • Gently brush the risen rolls with the egg wash. Sprinkle evenly with the Everything Bagel Seasoning. Bake for 25 to 30 minutes, or until browned.
