Preheat your oven to 350 degrees. Line a baking sheet with parchment paper.
Brush both sides of each slice of the baguette with olive oil. Arrange them on the baking sheet lined with parchment paper in a single layer and sprinkle with salt. Bake for 15 to 18 minutes, until toasted and golden brown.
While the bread is toasting, mix together the honey and chipotle powder.
Once the bread is browned, remove it from the oven and allow it to cool. Transfer the bread to a serving tray.
Cut the brie or cream cheese into thin slices, about the size of one slice of toast. Lay a piece of the cheese on each bread slice.
Lay a slice of peach on top of the cheese. Drizzle the chipotle honey over the bruschetta. Sprinkle on some thyme leaves. Serve immediately.
